      <image:caption>Chouara Tannery, located in the ancient medina quarter, Fes el Bali, is one of the oldest continually operating in the world. The tanneries feature rows of stone vats filled with different coloured dyes and white softening and fixing mixtures derived from cow urine, pigeon faces, quicklime, salt and water. The dyeing solutions use natural colourants - poppy, indigo, henna - and once the hides have been through the three day process of softening, then dyeing, they are dried in the open air, then sold onto crafts people to create the high quality products Morocco is famed for. The manual process is done by hand with a method that has not changed since The Middle Ages.</image:caption>
